Time-Honored Craftsmanship, From Local Pastures to Your Table

Quality meat starts long before the cut. Our livestock is sourced from trusted local ranchers, families who raise their herds on open pasture and finish them on the entire dried corn plant — stalk, cob, and all. This old-world method creates beautifully marbled beef with a rich, buttery finish — a flavor you can’t fake and won’t forget.

Once the animal arrives, we don’t rush the process. The first step is always hanging — where patience does the work.

Beef hangs 14–21 days for tender texture and full flavor.

Pork hangs 5–7 days to firm up while keeping its natural juiciness.

Wild game typically hangs 5–10 days, depending on species, to bring out clean, balanced flavor.

This is when we determine hanging weight, the traditional way of pricing by carcass weight before cutting and wrapping. It’s a detail that matters — and one that connects the ranch to your table.

Not all cuts are created equal. The front quarter carries the bold, rustic cuts — chuck, brisket, and ribs — built for slow roasts and big flavors. The rear quarter holds the refined classics — sirloin, tenderloin, and round — the centerpiece cuts for grilling and special meals. How we divide those quarters depends entirely on your preferences.

Our butchers work one-on-one with each order to make sure every cut suits how you cook and how you feed your family. The same care extends to wild game: every deer, elk, or hog is processed with precision and respect for the hunt that brought it in.
